Sigara Böregi (Cigarette shaped crisp rolls)

     
   Ingredients 
  • Sigara Böregi (Cigarette shaped crisp pastry) 1 packet filo pastry
  • 250 grams feta cheese
  • 1 egg
  • 1/2 bunch chopped parsley
  • 250 ml sunflower oil
  Preparation
  1. Break up cheese with a fork. 
  2. Add egg and chopped parsley and mix well.
  3. Lay out sheets of pastry on a flat surface and cover with a moistened tea towel.
  4. Cut filo pastry into 3 equal pieces, lengthwise.
  5. Take two layers of pastry and place a teaspoon of the cheese mixture at bottom of pastry. 
  6. Fold sides and roll pastry into a cigar shape. 
  7. Lightly wet edges with fingertip to seal any open edges.
  8. Fry pastries in hot oil until golden brown. This is a very quick process so you must work quickly. 
  9. Drain on absorbent paper and serve.
